Canning-- a way to eat locally, year round!

Hey everyone!

I've made it to the Farmer's Market this summer more than I ever have, and it has got me thinking about how nice it would be to eat locally year round.  The obvious finally came to me-- that I could learn how to can food!

And then, wouldn't it be great if the Co-op bought even more local produce and canned a bunch to sell during the winter?  Farmers could sell even more of their produce to eager canners through the co-op 7 days a week along with the one day a week at the farmer's market.

I am really excited about this idea and found this great website:

I have never canned food before, but I'm sure there are plenty of DFC members out there who are experts.  If the idea for the co-op to sell canned food was approved, the co-op couldn't start canning until the kitchen was certified and inspected regularly.  BUT!  We could start teaching each other about canning at home anytime!
